SPICY GINGER COD CEVICHE WITH DANDELION & TURMERIC

Yes Dandelions are edible. Of course don’t go out and pick the growing off the sidewalk, I know times are tough but this tangy weed is about 2.00 a lbs. and organic. Dandelions have many healing qualities and it is said to help you lose some of that water weight. It is loaded with vitamins and minerals.

What you will need:

  • 3 fillets of cod
  • 10 Limes
  • 1 Red Onion- Cut into small squares
  • 1 cucumber- Cut into small squares
  • 1 bunch of organic dandelion- cut into small bit size pieces
  • 3 Large Tomatoes- cut into small squares
  • Ginger – sliced
  • Turmeric- cut into little squares.

Cut the fillets into small squares and place in a glass bowl.

Cut the limes and drench the cod squares with lime juice. Remember the acid in the limes is what cooks the fish so make sure have the entire fish covered. Place in the fridge for a few hours, or until fish has cooked.

Throw in the Onions, Tomato, Cilantro, Ginger, Tumeric and Dandelions.

Place back in the fridge and allow all the ingredients to sit in the lime juice for a few hours if you have the patience leave it in the fridge overnight.

Serve on a green leaf or on a bed of Quinoa.
