Los Angeles feels like it’s on fire. The temperature is 98 degrees and honestly mijitos me facina, I love it, I love it, I love it, it is an opportunity to enjoy some Mexican inspired teas and comiditas.
Here is a recipe for Te De Menta (Mint Tea) and V’s Camaron Salad (Shrimp Salad). Perfect together or alone. Special thanks to the jumbo shrimps that gave their life so that I may enjoy a healthy meal. Thank you.
You can purchase cooked shrimp at Trader Joes or Whole Foods. Trader Joes brand not too bad.
- So this is not a vegan dish because of the shrimp. It is so simple and delicious.
- 15- shrimps you can buy these at Trader Joes.
- Bunch of White Asparagus.
- 1tbs of Virgin Coconut Oil
- 1 Red Onion
- Bag of Greens
- Fresh Basil Leaves
Rinse the shrimp well, specially if you have purchased these pre-cooked.
Cut the ends of the asparagus and rinse well.
Cut your onion into fajita slices.
Heat your pan.
When the coconut oil has heated throw in the onions and allow them to become a golden brown.
Throw in your asparagus and before those become soft
throw in the shrimp and allow them to brown a little.
Throw in your basil
Add a little fresh ground pepper and some pink Himalayan salt.
Serve over a bed of greens and there you have it.
